Preserved Lemon Pickled Shrimp

A summer favorite for cooling down, and a delicious staple to make year round. Highlighting our beautiful and unusual Preserved Lemons condiment, which add an intensity of flavor. This recipe requires only a handful of ingredients and few minutes of your time to make. 

SHOPPING LIST:

1 teaspoon Bella Cucina Peperoncini & Pimenton Savory Salt 

1 Tablespoon sweet paprika 
1 -1/2 # shrimp, shells and tails removed (devein as necessary)
1 cup Bella Cucina Extra Virgin olive oil
1 small sweet yellow onion, cut into thin half moons (or shallots)
½ cup lemon juice
1 wedge of Bella Cucina Preserved Lemon, rinsed and cut into small dice
1 garlic clove, crushed
pinch chili flakes
1 bay leaf
1 teaspoon celery seed
1 teaspoon mustard seed  


PREPARATION:

In a large saucepan, heat 4 quarts of water with the pimenton and salt over medium heat. When the water is boiling, add the shrimp and cook until opaque and slightly firm, about 1-2 minutes. Drain and set aside.

In a large bowl, add all of ingredients with the shrimp and toss to coat well.
Cover with plastic wrap or place in a glass jar and refrigerate for at least 3 hours, or until ready to eat and enjoy. Keeps up to 3 days.

VARIATIONS: Stuff shrimp in butter lettuce leaves or corn tortillas as tacos, top on salad greens, or toss with Bucatini pasta.
