This refreshing appetizer is a favorite of mine. It is easy to prepare, but makes an elegant and flavorful presentation at the table. I like to use a variation of the recipe by making a spread with the lemons, chives, pepper and softened cream cheese and putting on chive scones with the smoked salmon for a light breakfast or brunch snack. Either way, the flavors have a distinctively fresh and aromatic flavor. Try to find fresh, not packaged, cream cheese from your local specialty food grocer. The extra effort will be worth it once you taste the difference.

1/4 cup Sicilian Lemon Oil  
1/4 lemon Classic Preserved Lemons, 0.5 L  
8 ounces Cream Cheese
2 ounces smoked salmon, preferably applewood-smoked, cut in julienne slices
1 tablespoon chopped fresh chives
freshly cracked black pepper


Place the cream cheese on a large platter. Top with the smoked salmon and preserved lemon, scattering the pieces on the cream cheese and the platter. Drizzle with the olive oil. Top with the chives and black pepper.

Serve with Bella’s Dipping Crackers, or toasted crostini rounds
